So I finally made it to the Rochester Public Market this weekend (usually I just go to the small farmer’s market near my house but the selection & prices aren’t as good). I love the Public Market so very much. I walked away with so many wonderful vegetables and then I simply planned my meals this week around those.
I did just want to share a disclaimer with you that just because I plan these meals by the day doesn’t mean I actually make them that day. I often switch up my days based on how lazy (or ambitious) I’m feeling when I get home from work or if the ingredients are going bad quicker than I thought they would.
Today: Summer Squash Meatball Casserole (with venison) — because there was a TON of squash at the market!
Tuesday: Sausage, peppers, cabbage steak
Wednesday: Baked or grilled fish with asparagus and (purple!) cauliflower rice
Thursday: I’m going out to dinner to celebrate my best friend’s birthday! So Bob’s on his own.
Friday: Venison steak with Paleo Fried Green Tomatoes and Portobello Mushrooms.
Saturday: Party at our house!
So I’m really excited to use fresh produce this week and I’m hoping that I can make it to the market again this weekend — I went right after CrossFit since I was already out and it was the best decision.
What are you eating this week? Any fun things you’re trying with summer produce?
Yum! I’ve been obsessed with fruit salsa’s lately. I did a mango watermelon basil and sweet onion one the other day that was really tasty on top of fish. I love summer produce!
That sounds awesome!! Do you have a recipe? I’d love to make that!
Well… I’m kind of horrible with recipes. If you’ve ever read any I post they go something like:
Get some watermelon, mango, sweet onion and basil together. Chop up as much of it as you like. I like basil so I use a lot.
Mix it together in a bowl and throw some salt and pepper on it. If you’re feeling adventerous give that green Tabasco sauce a few shakes, say maybe a tablespoon, and mix that in too.
Try not to eat the whole thing with a spoon. But if you do, know that it will be tasty. 🙂
In truth, I usually use equal parts of the mango, watermelon and onion, but you could mix it up however you wanted.
Last night I took shrimp home grown garlic red pepper , yellow pepper a little evoo old bay seasoning and a seafood seasoning tossed in a bowel put it in a basket for the grill and grilled it . Really enjoined it served it with pasta . I know you do not eat pasta . Do you eat venison because you like more then beef?
Sounds great! My dad is a hunter so we get free venison. So we eat venison because it’s cheaper than beef 😉
