I know it’s been a while since I’ve shared a recipe w/ you guys (hoping to whip something up next week) but in the meantime, I’m sure you’re probably thinking about all of the good eats for the 4th. I know my family is! My sister, mom, and I created a board on Pinterest where we have been pinning all sorts of wonderful ideas. My sister recently had to cut dairy from her diet, and since Bob & I are trying to stay as Paleo as possible, we’ve been pinning a lot of Paleo-friendly 4th of July recipes.
I’ll tell you what — 4th of July is pretty easy to be paleo-friendly. I don’t really like mayo-based salads like macaroni salad and potato salad, so I actually don’t think I’ll be missing out much at all. AND we have some spectacular meals & treats (which I don’t really count as “Paleo” even if they do exclude dairy and grains — still a TON of sugar!) planned.
(Side note: Today there is FRESH homemade whipped cream, strawberries, and homemade shortcake in the kitchen. Just tempting me. I WANT IT SO BAD. All I’ve been thinking about is strawberry shortcake. And then I remind myself that in a few days I will be eating s’mores and I should budget my indulgences. What’s worth the extra calories? Probably not strawberry shortcake. Definitely chocolate.)
Ok, back to the main point of this post!
Here’s what we’re thinking:
For Thursday, the 4th:
On the 4th, we’ll be hanging out by my parents’ pool and lounging around. No big plans until the night when we go out to dinner. But for lunch, I think I’ll make my venison bacon burgers (which my dad will LOVE) & my favorite sweet potato wedges as well as a green salad to go with everything. Or maybe this Turkish Chopped Salad which looks delicious.
For Friday:
My sister and grandmother won’t actually get into town until Thursday night, so Friday will be our family 4th of July celebration! We’ll be heading out on my parents’ boat that afternoon to enjoy some water-skiing, tubing, and boating fun.
Maybe some of these to snack on? (Skip the cheese!)
For lunch (or dinner?) we’ll be Building our own shish kabobs! This blog site has some delicious Paleo-friendly recipes for marinades.
Paleo Slaw. I could eat the whole recipe. SO GOOD.
And some Paleo desserts. We have not yet decided on what we’re doing yet, but here are a few of my favorite options:
And finally, on Friday, this is completely NOT Paleo friendly, but a must-have. I’m sorry. Can’t have the 4th of July without s’mores. Impossible.
What are you making for the 4th? What are you eating that is a “MUST HAVE” for you?
